The Wine & Food Society of San Francisco has a wine cellar that has been maintained since it was first organized in the 1930s. It is a major benefit to its members and their guests. The Wine Committe provides a range of wines available for each dinner chairman in an attempt to match their food selections, and, from these, choices are served. The Wine Committee also replaces wines and builds the Cellar throughout the year. Thus, it is our practice to drink yesterday's wines at replacement costs. The Society's Cellar is valued in excess of $750,000.

The Society has been monitoring the temperature since its wine was placed at the Durkee Cellar facility.
After years of consistancy the data have been observed only intermitantly. Here are two recent periods: the heat of mid-Summer and the cold of late Fall.
The green line represents the cellar environemnt; the black line are measurement taken just outside; the red are data gathered in the main Durkee warehouse next door.
In each case, thirty-minute data were gathered, and a running daily average is plotted with these results. The average for the period shown is provided.
Note the vertical scales are the same, but they are offset to show winter or summer.
